Import an existing table from the clipboard, or on iPad use split view and drag and drop text from another app. Once you've finished editing your table copy onto the clipboard and add into your writing app.
There are no Markdown writing apps on iOS which include a table editor. Despite that Markdown is used in the top apps on iOS. Markdown Tables will be an essential companion app to users who need tables in their documents.
